  • Onion -2, cut in cubes

  • Potatoes -2, cut in cubes

  • Carrot - 2, cut in coins

  • Sweet potatoes -2, cut in cubes

  • Celery - 1, cut in cubes

  • Olive oil ½ cup

  • Empanadas Mix 4 tbsp


Heat the oven at 420F

Mix the oil and Empanada Mix in a large bowl and toss the vegetables. Place the vegetables evenly in a two to three inch deep oven-safe container.

Bake it for 45 minutes until golden brown and serve.
