Onion -2, cut in cubes
Potatoes -2, cut in cubes
Carrot - 2, cut in coins
Sweet potatoes -2, cut in cubes
Lemon juice 2 each
Olive oil ½ cup
Pampas herbs 4 tbsp
Heat the oven at 350F
Mix the oil and pampas herbs in a large bowl and toss the vegetables. Use the remaining mixture as a rub for the chicken.
Place the vegetables evenly in a two to three inch deep oven-safe container and the chicken on top.
Bake it for 45 minutes until fully cooked, add lemon juice, and serve.
