Salmon with Spice the Sea

The best way to cook a salmon is by searing it. Why? Because you are creating a nice golden brown crust that will increase the natural sugar of the fish, which gives us more flavor.

Let’s start cooking, but first, here is the list of ingredients you need.



Remove the salmon from the cooler, and let it reach room temperature.

Heat up a skillet to medium-high.

Add the oil to the pan and let it warm up until smoky.

Take the salmon and place it on the pan, skin up. Do not move the salmon for 2 minutes. This will create the crust that we are looking for. Flip it over and cook it for 5 more minutes on medium heat.

Put the butter in a different pan and melt it, remove from the heat, add the Spice the Sea and let it set.

Plate the salmon skin down and brush with the butter. This will give the fish the juice it needs, the perfect balance of spices and the shine for presentation.

Grilled Bronzino

Bronzino is the name for the European bass. It is delicious in any way you cook it. In this recipe we will grill it.


  • Bronzino whole

  • Orange 1 each

  • Sliced Lemon 1 each

  • Sliced Pampa's herbs 1 tbsp.


Let's start the fire for the grill, them marinate our fish.

Place the fish on the cutting board and cut it all the way to the tail following the belly. Season the inside and stuff it with orange and lemon slices.

At this time your grill is hot and ready to cook the bronzino. Check the temperature of the grill with your hand slightly over the grill and count 7 seconds.

Place the fish on the grill, caramelize the skin, and flip it over. Fish is usually really fast to cook.

I recommend to eat the skin but you can also remove it.

Enjoy it with a glass of Chardonnay!

Monk Fish

With Spice the Sea

Monk fish is really good if you know how to make it, and most importantly, how to season it.


  • Monk fish

  • Flour 1 cup

  • Spice the Sea 2 tbsp.

  • Lemon juice 1 each

  • White wine 1/2 cup

  • Oil 1/2 cup

  • Fresh Dill


In a bowl, mix the flower and Spice the Sea. Pass the fish through the flower, making sure that the entire surface is covered with flour.

Heat up a pan, reduce it to medium heat and add oil. When the oil reaches a good temperature and begins to smoke a bit, sear all the sides of the fish.

Add the wine and cover for 5 minutes or until fully cooked.

Finish it with lemon juice and fresh dill.
