Red Radish Salad

Here is a perfect example of simple and delicious, just mixing a couple ingredients and seasoning it well is everything you need.

Ingredients:

Red Radish 1 bunch

Pampa’s Herbs 1 tspn.

Olive Oil 2 tbsp.

Apple Cider Vinegar 1 tspn.

Method:

In a bowl mix the Pampas Herbs, the vinegar and the oil making a vinaigrette.

Slice the radishes really thin and dress them with the vinaigrette.

This recipe is great side dish, I recommend eating this salad with steak because it is refreshing.

Scallop Ceviche

Ceviche is one of the greatest dishes that Peru gave to the world!

In this recipe, we will make a citrus solution with Spice the Sea to cure or cold cook our seafood.

Ingredients:

  • Baby Scallops 1lbs

  • Spice the Sea 4oz

  • Oil 1 cup

  • Lemon Juice 1/2 cup

  • Red Onion 1 medium, cut in julienne

  • Tri Color Peppers 1ea, cut in julienne

  • Hot chili 1 ea, cut in julienne

  • Cilantro leaves 1/2 cup

Method:

Place the spices in a bowl, add the lemon juice and the oil. Mix them until it becomes a dressing.

Place all the ingredients in a bowl, season them with the dressing and let it set for a minimum of half an hour.

Serve cold with some crackers or corn chips.

Delicious Okra

Okra was new for me when I came to North America. The first time I tried it, I did not like the texture. This kind of slimy vegetable was not for me! But One day I realized if the okra is fresh, seasoned well, and cooked properly, this does not happen.

Sometimes the easy techniques are the best way to do it!

Ingredients:

Method:

Heat up a cast iron pan, add the oil and let it heat up until smoky.

Slice the okra in coins and add it to the pan. Let the okra caramelize, reduce the heat to medium, add the butter and the herbs to finish.

Enjoy this with chicken or beef!

Grilled Bronzino

Grilled Bronzino

Bronzino is the name for the European bass. It is delicious in any way you cook it. In this recipe we will grill it.

Ingredients:

  • Bronzino whole

  • Orange 1 each

  • Sliced Lemon 1 each

  • Sliced Pampa's herbs 1 tbsp.

Instructions:

Let's start the fire for the grill, them marinate our fish.

Place the fish on the cutting board and cut it all the way to the tail following the belly. Season the inside and stuff it with orange and lemon slices.

At this time your grill is hot and ready to cook the bronzino. Check the temperature of the grill with your hand slightly over the grill and count 7 seconds.

Place the fish on the grill, caramelize the skin, and flip it over. Fish is usually really fast to cook.

I recommend to eat the skin but you can also remove it.

Enjoy it with a glass of Chardonnay!
