Roasted Duck

Roasting a whole duck is not easy but it is worth it. It is so delicious, the smell is incredible, then you can not stop eating it.


  • Whole Duck

  • Soy Sauce 1 cup

  • Patagonia Mix 4 tbsp.

  • Oranges 2 ea (zest and juice)


In a bowl, mix the ingredients.

Place the duck in a pan and cover with the mix.

Let marinate overnight.

Take the duck out of the marination and place it on a rack, put it back in the cooler and let it dry at least a day.

Heat the oven to 420*F.

Place the duck in the oven and cook for 45 minutes to one hour. The skin should be golden brown. Place a thermometer into the breast and check that it has reached 150*F .

Remove the duck from the oven and let it rest for 5 to 10 minutes.

Slice the duck and serve it with your favorite side dish.

Roasted Pork Loin with Patagonia Mix

A really clean cut of pork, the pork loin it is great for different cooking techniques. Here I will give some tips to make a whole delicious pork loin.


  • Pork loin 1 ea

  • Patagonia Mix 2 tbsp

  • Lemon juice from 1 lemon

  • Olive oil 2 tbsp


Preheat the oven to 360*F.

Place the pork loin on a cutting board and season it with Patagonia Mix and lemon juice.

Heat up a pan, add the oil and caramelize the loin. This will create a crunchy outer coating on the pork loin which will help contain the juices.

Place the pork in the oven and cook for 30 minutes.

Remove from the oven when it reaches 145*F or higher in the center.

Let it rest for 10 minutes and serve with your favorite side dish.


Roasted Carrots

This technique is by far my favorite for carrots. The high temperature of the oven creates a delicious caramelization on the surface while the inside becomes smooth like a puree.


Carrots 1pp

Heritage Blend 2 tbsp

Olive oil 4 tbsp

Salt 1 pinch


Preheat the oven at 400 F.

Peel the carrots and place them on top of a sheet pan, add the oil, salt and the spices.

Bake it for 45 minutes or until becomes tender.

Enjoy these sweet carrots just like that or you can add some goat cheese.
