Roasted Pork Loin with Patagonia Mix

A really clean cut of pork, the pork loin it is great for different cooking techniques. Here I will give some tips to make a whole delicious pork loin.


  • Pork loin 1 ea

  • Patagonia Mix 2 tbsp

  • Lemon juice from 1 lemon

  • Olive oil 2 tbsp


Preheat the oven to 360*F.

Place the pork loin on a cutting board and season it with Patagonia Mix and lemon juice.

Heat up a pan, add the oil and caramelize the loin. This will create a crunchy outer coating on the pork loin which will help contain the juices.

Place the pork in the oven and cook for 30 minutes.

Remove from the oven when it reaches 145*F or higher in the center.

Let it rest for 10 minutes and serve with your favorite side dish.


Octopus with Spice the Sea

One of my favorite dishes is octopus! It can be tricky to cook, so the result could be great or really frustrating. Here is my way to cook them right from the beginning to avoid frustration - you can use this for octopus and other preparations too.


  • Octopus 1 ea

  • Spice the Sea 4oz

  • Onion 1 cut in cubes

  • Garlic 4 cloves

  • Carrot 2 ea cut in cubes

  • Celery 4 stalks cut in cubes

  • White Wine 2 cups

  • Oil 1 cup

  • Water


In a big pot, place the oil and sear all the vegetables at medium heat. Add the wine and Spice the Sea, and let the alcohol evaporate.

Place the octopus in the pot and cover it with water. Bring the pot to a boil, reduce the heat to minimum and simmer for 30 to 45 minutes until the protein breaks and the octopus develops a tender texture as a result.

If you want to eat it hot immediately, remove it from the pot and eat it as is, or cook it with a sauce or some butter.

If you are planning to serve the octopus in a salad or cold appetizer, remove the octopus from the pot and place it in an ice bath to stop the cooking process.

Breakfast Eggs with Patagonia Mix!!

Breakfast is really important, so why not start with really good eggs?


  • Eggs 2 ea.

  • Patagonia Mix 

  • Olive oil

  • Slice of bread


Heat up a pan and add some oil.

Break the eggs in a small bowl.

When the pan is hot, place the eggs carefully inside and avoid breaking the egg yolks.

Sprinkle them with Patagonia Mix. Continue cooking as desired. If you want the yolk cooked, cover the pan to trap heat or flip the eggs.

Enjoy them with a slice of bread and black coffee.
