Roasted Butternut Squash

Winter is great for Squash!! I really like this recipe, it is simple, easy and fast.

Ingredients:

Butternut Squash 1ea

Heritage Blend 2 tbsp

Olive oil 2 tbsp

Salt 1 pinch

Method:

Preheat the oven at 400 F.

Peel the squash and slice it in one inch thick coins.

Place the slices on top of a oven sheet, the surface of each slice should be touching the pan.

Add the oil on top, salt and Heritage Blend.

Bake it for 45 minutes or until it becomes tender.

Enjoy this sweet butternut squash just like this or you can add some goat cheese and arugula to make a salad.

Roasted Carrots

This technique is by far my favorite for carrots. The high temperature of the oven creates a delicious caramelization on the surface while the inside becomes smooth like a puree.

Ingredients:

Carrots 1pp

Heritage Blend 2 tbsp

Olive oil 4 tbsp

Salt 1 pinch

Method:

Preheat the oven at 400 F.

Peel the carrots and place them on top of a sheet pan, add the oil, salt and the spices.

Bake it for 45 minutes or until becomes tender.

Enjoy these sweet carrots just like that or you can add some goat cheese.

Roasted Chicken

Ingredients:

Onion -2, cut in cubes

Potatoes -2, cut in cubes

Carrot - 2, cut in coins

Sweet potatoes -2, cut in cubes

Lemon juice 2 each

Olive oil ½ cup

Pampas herbs 4 tbsp

Whole Chicken

Method:

Heat the oven at 350F

Mix the oil and pampas herbs in a large bowl and toss the vegetables. Use the remaining mixture as a rub for the chicken.

Place the vegetables evenly in a two to three inch deep oven-safe container and the chicken on top.

Bake it for 45 minutes until fully cooked, add lemon juice, and serve.
