Roasted Duck

Roasting a whole duck is not easy but it is worth it. It is so delicious, the smell is incredible, then you can not stop eating it.

Ingredients:

  • Whole Duck

  • Soy Sauce 1 cup

  • Patagonia Mix 4 tbsp.

  • Oranges 2 ea (zest and juice)

Method:

In a bowl, mix the ingredients.

Place the duck in a pan and cover with the mix.

Let marinate overnight.

Take the duck out of the marination and place it on a rack, put it back in the cooler and let it dry at least a day.

Heat the oven to 420*F.

Place the duck in the oven and cook for 45 minutes to one hour. The skin should be golden brown. Place a thermometer into the breast and check that it has reached 150*F .

Remove the duck from the oven and let it rest for 5 to 10 minutes.

Slice the duck and serve it with your favorite side dish.

Duck with Patagonia Mix

Duck is one of my favorite meats to cook and prepare. It is so versatile that it can be used for stew, salads, or by itself with some garnishes. Most of the techniques we use for cooking the meat involves a short cooking time and high temperature, or low and slow to break the fiber and tenderize the meat.

Ingredients:

  • Duck legs 2 ea.

  • Flour 1 cup

  • Patagonia Mix 3 tbsp.

  • Oil 2 tbsp

  • Onion 1 cup (cut in cubes)

  • Garlic 2 cloves

  • White wine 1 cup

  • Vegetable stock 1 cup

Method:

In a bowl mix the flour with one tablespoon of Patagonia Mix. Take the legs and cover them with the flour and let them marinate for five minutes.

Heat a cast iron pan, add oil and caramelize the duck legs. Remove the legs and add the onion and garlic., caramelize and add the legs back into the pan.

Add the wine and let it boil for 1 minute to remove the alcohol, add the vegetable stock, season with more Patagonia mix and cook the legs for 2 to 3 hours on low heat.

When the bone is easily detached from the meat, the legs are ready.

You can have them with a salad in the summer or a puree in winter.

Roasted Pork Loin with Patagonia Mix

A really clean cut of pork, the pork loin it is great for different cooking techniques. Here I will give some tips to make a whole delicious pork loin.

Ingredients:

  • Pork loin 1 ea

  • Patagonia Mix 2 tbsp

  • Lemon juice from 1 lemon

  • Olive oil 2 tbsp

Method:

Preheat the oven to 360*F.

Place the pork loin on a cutting board and season it with Patagonia Mix and lemon juice.

Heat up a pan, add the oil and caramelize the loin. This will create a crunchy outer coating on the pork loin which will help contain the juices.

Place the pork in the oven and cook for 30 minutes.

Remove from the oven when it reaches 145*F or higher in the center.

Let it rest for 10 minutes and serve with your favorite side dish.

Roasted Butternut Squash

Winter is great for Squash!! I really like this recipe, it is simple, easy and fast.

Ingredients:

Butternut Squash 1ea

Heritage Blend 2 tbsp

Olive oil 2 tbsp

Salt 1 pinch

Method:

Preheat the oven at 400 F.

Peel the squash and slice it in one inch thick coins.

Place the slices on top of a oven sheet, the surface of each slice should be touching the pan.

Add the oil on top, salt and Heritage Blend.

Bake it for 45 minutes or until it becomes tender.

Enjoy this sweet butternut squash just like this or you can add some goat cheese and arugula to make a salad.
