Sauces to go with your pastas 

Fresh pasta is important. But equally important is the sauce that accompanies it. Because it will give it the necessary seasoning to be perfect. That is why in this blog, we share with you 5 different sauces, so you can give the flavor you are looking for in your pasta, and choose your favorite option.

Bolognese Sauce

Let's start with Bolognese sauce, the symbol of Italian gastronomic tradition. It's usually the favorite of the little ones, and it's a recipe that never fails!

For this sauce you will need Heritage Blend by Nativo Spices.

Ingredients for four people:

  1. 40 g butter

  2. 2 tablespoons olive oil

  3. 1 chopped onion

  4. 1 chopped celery stalk

  5. 1 tablespoon Heritage Blend by Nativo Spices

  6. 1 chopped carrot

  7. 250 g minced beef

  8. 1 tablespoon tomato paste, salt and pepper.

Preparation of homemade bolognese sauce

1-Heat the butter and olive oil in a small saucepan.

2-Pour the onion, celery, carrot and meat. Season the mixture with salt and pepper to taste and add Heritage Blend by Nativo Spices.

3-Mix well and simmer for a few minutes until the vegetables are tender and the meat begins to brown. Mix the tomato with a little water and pour it in.

4-Lid the casserole and let the sauce cook over very low heat for an hour and a half. We must watch and add hot water if we see that it is dry.

The type of meat you use will determine the final result when mixing it with the pasta. You can also add mushrooms to enrich the recipe.


Genovese pesto sauce

This sauce is simple and quick to prepare. Not to mention its impressive flavor and personality.

For this sauce you will need Pampa's Herbs from Nativo Spices.

Ingredients for four people:

  1. bunch of fresh basil (large leaf)

  2. 2 tablespoons of Grana Padano cheese or your favorite grated cheese

  3. 1 tablespoon of Pampa's Herbs

  4. 1 handful of pine nuts

  5. 1 or 2 cloves of garlic, extra virgin olive oil and salt

  6. Optionally a few tablespoons of water, depending on the texture you prefer, more or less liquid

Preparation of the pesto sauce

1-Mash the garlic with the pine nuts and basil in a mortar and pestle until a fine paste is obtained.

2-Then add the grated Grana Padano cheese, mix well and add olive oil little by little, until you get a thick cream. We can also grind all the ingredients in a blender. Add Pampa's Herbs and stir.

3-At serving time, add to this thick sauce a splash of the pasta cooking water to make it more liquid and mix well.

We can change the pine nuts for another dried fruit. There is also a pesto rosso (red), which is prepared by replacing all or part of the basil with dried tomatoes rehydrated and preserved in oil.


 

Amatriciana sauce

One of the sauces with more history, tradition and flavor. With ingredients such as tomato, onion, chili pepper and bacon we can achieve a sauce with a different flavor to those we are used to use for our pasta dishes. 

Ingredients for two people:

  1. olive oil to grease

  2. 100 g of diced pancetta

  3. 1 onion in thin slices

  4. 500 g of peeled

  5. deseeded and diced tomatoes

  6. 1 tablespoon of Patagonia Mix by Nativo Spices

  7. freshly chopped and deseeded chili pepper

  8. salt and freshly ground black pepper.

Elaboration of the amatriciana sauce:

1-Grease a casserole with oil, add the bacon and fry over low heat until the fat is released.

2-Add the onion and sauté for 10 minutes, stirring, until lightly browned.

3-Add the tomato, chili, salt, pepper and Patagonia Mix of Nativo Spices, and continue cooking for 40 minutes, adding warm water if necessary. Mix with the pasta and serve.


Arrabiata sauce 

Attention spicy lovers! This sauce is especially for you. For this sauce you will need Patagonia Mix by Nativo Spices.

Ingredients for four people:

  1. one kilo of chopped or crushed peeled tomatoes

  2. 2 or 3 cloves of garlic

  3. 3 or 4 fresh chili peppers or dried cayenne

  4. 1 tablespoon of Patagonia Mix by Nativo Spices

  5. Oregano

  6. Oil, salt and fresh basil.

    Optionally, decorate with a little grated Grana Padano cheese on top when serving.

Preparation of the arrabiata sauce

1-Paste the garlic and put them in a frying pan or casserole with oil. When they have left all their aroma, add the chopped chili pepper and the chopped or crushed tomato.

2-Salt and pepper and let them cook for half an hour, first over high heat and then over low heat.

3-Middle cooking add a little water from boiling the pasta so that the sauce does not dry (the same solution that we use to give creaminess to our carbonara sauce).

4-Rectify the salt and add the oregano, the tablespoon of Patagonia Mix by Nativo Spices and the chopped basil.

5-Drain the pasta and add it to the sauce, stir to soak it well and serve accompanied, of course, with grated Grana Padano cheese.


Alfredo sauce

It is a sauce similar to the donkey sauce, only with more butter. It can be prepared while cooking the pasta, which makes it a great resource for those occasions when there is little time to cook. 

For this recipe you will need Spice the Sea by Nativo Spices.

Ingredients to accompany two servings of pasta:

  1. 150 ml of liquid cooking cream

  2. 1 tablespoon of Spice the Sea by Nativo Spices

  3. 1 clove of garlic

  4. 30 g of grated Parmesan cheese

  5. 20 g of butter

  6. salt and black pepper.

Preparation: 

1-Peel and finely chop the garlic. Heat the butter in a frying pan and poach it. 

2-Before it begins to brown, add the liquid cream, salt and pepper to taste and add Spice the Sea.

3-Cook over low heat for two or three minutes.

4-Add the grated Parmesan cheese, mix, give a last boil and ready to accompany a good plate of spaghetti, fettuccine, tagliatelle or any other type of long pasta.
